How Nuick foods’ Freeze Dried Chikoo is Made?
Freeze dried chikoo slices undergo a special dehydration process which is focused on retaining all of its essential nutrients and natural flavour. Firstly, naturally ripened sapota (Chikoo) are hand-picked. These are then washed, peeled and hygienically processed to cut into slices. Then the technologically advanced freeze drying process takes place. Chikoo slices are frozen to -50° C in a blast freezer. In this process, entire water content of the fruit changes to miniscule ice crystals. Then the frozen fruit is placed in a vacuum chamber. The pressure is then lowered and temperature is set to rise slowly. This process is known as lyophilisation. Sublimation taken place and the entire water content of the fruit is directly transformed into vapour from ice crystals. The fruit is dehydrated while retaining all the nutrients, original taste, aroma and texture. Once freeze dried, the slices transform into lightweight snacks. These slices are then sophisticatedly packed along with Nitrogen flushing to maintain the freshness and aroma. To prevent reabsorption of moisture, a 20cc oxygen absorber is placed inside the primary packaging. The packaging insures shelf life of up to 12 months and can be stored at room temperature, away from direct sunlight.
